Description: Founded in 2014, Union y Fe has over 250 producers, most of whom have Fair Trade and Organic certification. The cooperative provides extensive training to its members from trained agronomists with focuses on everything from pest control and soil analysis to post processing techniques and best practices. The cooperative is not only dedicated to quality of coffee, but also quality of life for its members. On top of training from top to bottom, members are also trained in food farming techniques to improve food security.
Members who deliver coffee to Union y Fe handpick ripe cherries, and ferment coffees between 50 hours immediately after depulping. Once washed clean, the parchment coffee is dried on customized raised beds for 10-18 days.
We’ve been really impressed by the quality of Peruvian coffees for years, and Union y Fe is one of the cooperatives that we’ve been fans of, without ever having the opportunity to bring in their coffee. We’re excited to have it this year. It arrived with the brightness of Orange and Lime, with a deep Malt note, and the sweetness of Brown Sugar.

At Elissimo Coffee we are meticulous about every part of the coffee process from sourcing, to roasting, to grinding, to brewing.
