Elissimo Story
Like a lot of folks, Clement loves his coffee.
And, like many of us, every day he would get up craving that first cup and by the mid-day he found himself enjoying yet another cup. By evening, Clement had that after dinner cup as satisfying as any aperitif.
Yes, Clement loves his coffee.
But, unlike most of us, Clement loves coffee so much that he wasn’t just satisfied drinking it, he wanted to know everything there was to know about
where it came from, the people involved, how it was processed, and how it got from that field into his brewer and cup.
He discovered that he enjoyed everything about coffee so much that he wanted to make his own coffee. First, he studied and learned everything there was to know about the roasting process - until he became a coffee roast master. Then, with just under a decade of professional roasting under his belt, he sourced the finest green beans that he could from his home in Orange County, CA. He roasted and tasted coffee from around the world, from places like Burundi, Ethiopia, Sumatra, Columbia, Chiapas, Nicaragua, Kenya, and Guatemala, finally settling on the perfect full-city roast for several of the regions. But, he couldn’t settle on just one. So, he vowed to always carry multiple regional beans for his customers to drink whenever they wanted.
Lastly, he built a cafe experience that would be the best coffeehouse in Rancho Santa Margarita.
It is important to Clement that he became a coffee roasting master - so much so that he wanted it to be a part of his first-class cafe and customer experience in the store. So, not only did he build a terrific coffee house, with great baristas, and a great ambiance, but also installed world-class roasters, to create his personalized roasts and to share that wonderful warm aroma that he loves so much with his customers.
The only thing left was what to call his first-class coffeehouse...
It had to be as wonderful and lovely as his coffee, maybe even more so. There was only one choice, he named it after one of his two beautiful daughters, Katelyn & Elise, creating Elissimo from a family nickname, imparting just how much love, care and attention goes into every cup of coffee served in his cafe.
